  • 1 large egg
  • 2 cups all-purpose flour
  • 1 ½ cups white whole wheat flour
  • 2 tablespoons unsalted butter (at room temperature)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 400° F and line a baking sheet with parchment paper.
  2. In a stand mixer bowl, combine warm water, warm milk, sugar, and yeast; let it sit for about 5 minutes until foamy.
  3. Add salt, one egg, and both flours; mix on low speed using the paddle attachment until combined.
  4. Gradually mix in butter pieces until incorporated.
  5. Switch to the dough hook and knead on low speed for about 8-12 minutes until smooth and slightly sticky; adjust with flour if necessary.
  6. Transfer dough to a floured surface, knead briefly, then cut into 8 equal pieces and shape into balls.
