  • 1.5 lbs chicken cutlets or breasts
  • 1.5 tablespoons Italian seasoning
  • 4 tablespoons olive oil
  • 2 tablespoons butter
  • 3 garlic cloves (minced)
  • 10.5 oz can cream of chicken soup with herbs
  • 1.5 cups milk
  • 1 oz packet Ranch seasoning
  • 1/2 cup sour cream
  • 3 lbs russet potatoes
  • 1 cup half-and-half
  • 6 tablespoons butter (softened)
  • 6 oz shredded cheese (gruyere, fontina, or mozzarella)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • pepper to taste

Instructions

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken with Italian seasoning, onion powder, salt, and pepper.
  2. Cook the seasoned chicken for about 5-7 minutes per side until golden brown and fully cooked. Remove from the skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in cream soup, milk, ranch seasoning, optional herbs, and sour cream until combined.
  4. Return the chicken to the skillet and simmer on low heat for about 10 minutes until heated through.
  5. Boil peeled potato chunks in salted water until fork-tender; drain and mash with half-and-half, butter, cheese, garlic powder, salt, and pepper.
  6. Serve the creamy ranch chicken over cheesy mashed potatoes.
