Ingredients

• 1 lb baby potatoes, halved (red or gold work great)
• 12 oz fresh green beans, trimmed
• 3 tbsp olive oil
• 1 packet (1 oz) ranch seasoning mix
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp black pepper
• ¼ tsp salt (adjust to taste)
• Optional: ¼ cup grated parmesan for topping
• Optional: Fresh parsley or chives for garnish


Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper or lightly grease it.

Step 2: Prep the Veggies
Wash and halve the baby potatoes.
Trim the ends off the green beans.
Make sure everything is roughly the same size to ensure even roasting.

Step 3: Toss with Seasoning
In a large mixing bowl, combine the potatoes and green beans.
Drizzle with olive oil and sprinkle in the ranch seasoning, garlic powder, onion powder, pepper, and salt.
Toss until all the vegetables are evenly coated.

Step 4: Spread on Baking Sheet
Arrange the seasoned potatoes and green beans in a single layer on the prepared baking sheet.
Place the potatoes cut-side down for extra crispiness.

Step 5: Roast the Vegetables
Roast for 25–30 minutes, flipping halfway through.
The potatoes should be fork-tender and golden, and the green beans slightly crisp and caramelized.

Step 6: Add Finishing Touches
If using parmesan, sprinkle it over the veggies during the last 5 minutes of roasting.
Once done, remove from the oven and sprinkle with fresh parsley or chives if desired.

Step 7: Serve Warm
Serve immediately as a side dish or as a base for a simple protein bowl.
