- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup semi-sweet or dark chocolate chips
- ½ cup fresh raspberries, gently patted dry
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until fully incorporated.
Step 2: Mix the Dry Ingredients
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Step 3: Add Chocolate & Raspberries
- Gently fold in the chocolate chips.
- Carefully fold in the raspberries, being gentle to avoid crushing them too much.
Step 4: Bake the Cookies
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
Step 5: Cool & Enjoy
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
- Enjoy warm with a glass of milk or a cup of coffee!
Notes
- Use Fresh or Frozen Raspberries – If using frozen raspberries, do not thaw them before adding to the dough.
- Don’t Overmix – Gently fold in raspberries to keep them from breaking apart.
- Chill the Dough – For thicker cookies, chill the dough for 30 minutes before baking.
- Experiment with Chocolate – Try using white chocolate, dark chocolate, or a mix!
