Description

If you love soft, chewy cookies with a burst of fruity sweetness and rich chocolate in every bite, these Raspberry Chocolate Chip Cookies are a must-try! The tartness of fresh raspberries pairs perfectly with melty chocolate, making these cookies irresistibly delicious. They’re perfect for any occasion—whether it’s a cozy treat, a party dessert, or just because!

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup semi-sweet or dark chocolate chips
  • ½ cup fresh raspberries, gently patted dry

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully incorporated.

Step 2: Mix the Dry Ingredients

  1. In a separate bowl, whisk together the flour, baking soda, and salt.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until combined.

Step 3: Add Chocolate & Raspberries

  1. Gently fold in the chocolate chips.
  2. Carefully fold in the raspberries, being gentle to avoid crushing them too much.

Step 4: Bake the Cookies

  1. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  2. Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

Step 5: Cool & Enjoy

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  2. Enjoy warm with a glass of milk or a cup of coffee!

Notes

  • Use Fresh or Frozen Raspberries – If using frozen raspberries, do not thaw them before adding to the dough.
  • Don’t Overmix – Gently fold in raspberries to keep them from breaking apart.
  • Chill the Dough – For thicker cookies, chill the dough for 30 minutes before baking.
  • Experiment with Chocolate – Try using white chocolate, dark chocolate, or a mix!
