  • 9 ounces cherry tomatoes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ¼ cup vegetable broth
  • 1 tablespoon lemon juice
  • ¼ teaspoon saffron
  • 4 ounces shrimp or other seafood
  • 1 tablespoon chopped chives (for serving)
  • Freshly ground black pepper (for serving)

Instructions

  1. Prepare your ingredients by chopping chives, finely chopping shallots, and mincing garlic.
  2. Boil salted water in a large pot for the ravioli.
  3. In a skillet, heat 1 tablespoon of butter over medium heat. Sauté garlic and shallots for about a minute until fragrant.
  4. Add cherry tomatoes, salt, pepper, and oregano; cover and braise for about 5 minutes.
  5. Mix in vegetable broth and remaining butter; let it simmer for around 3 minutes.
  6. Cook the ravioli in boiling water until tender (about 2-3 minutes), then drain.
  7. Combine lemon juice and saffron into the sauce, then toss cooked ravioli and seafood gently until well coated.
