  • 16 ounces chicken Chicken Chicken Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add diced onion, salt, and pepper; sauté until softened (3-4 minutes).
  3. Stir in minced garlic and Italian seasoning; cook for 30 seconds.
  4. Add ground chicken; crumble and cook until browned.
  5. Mix in chicken broth, crushed tomatoes, and ravioli; season with salt and pepper.
  6. Bring to a simmer; reduce heat to low and cook until ravioli is al dente (3-5 minutes).
  7. Stir in chopped spinach and heavy cream; heat until spinach wilts.
