For the Roasted Potatoes:

  • 800 g (about lb) baby potatoes, halved or quartered

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp smoked paprika (optional)

  • Salt and black pepper, to taste

For the Baked Feta & Garlic:

  • 200 g (7 oz) block of feta cheese

  • 4 cloves garlic, unpeeled

  • 1 tbsp olive oil

  • Fresh rosemary or thyme sprigs (optional)

For Garnish & Finishing:

  • Fresh parsley, chopped

  • Zest of ½ lemon

  • Chili flakes (optional, for a bit of heat)


Instructions

Step 1: Prep and Season the Potatoes

  1. Preheat your oven to 200°C (400°F).

  2. In a bowl, toss halved potatoes with olive oil, oregano, paprika, salt, and pepper.

  3. Spread them in a single layer on one side of a large baking dish or sheet pan.

Step 2: Add Feta and Garlic

  1. Place the feta block on the empty side of the dish.

  2. Add unpeeled garlic cloves next to the feta.

  3. Drizzle 1 tbsp olive oil over the feta and garlic.

  4. Add a few rosemary or thyme sprigs if using.

Step 3: Roast Everything Together

  1. Roast in the oven for 30–35 minutes, or until the potatoes are golden and fork-tender.

  2. Garlic should be soft and slightly caramelized; feta golden on top and soft inside.

Step 4: Mix and Mash

  1. Once roasted, squeeze the soft garlic from the peels into the dish.

  2. Use a spoon to gently break and stir the baked feta and garlic into a creamy sauce.

  3. Toss the roasted potatoes into the creamy feta mix until evenly coated.

Step 5: Garnish and Serve

  1. Sprinkle chopped parsley and lemon zest over the top.

  2. Add a pinch of chili flakes if desired.

  3. Serve hot as a side or main with crusty bread or grilled veggies.

Notes

Don’t crowd the pan – Use a large baking sheet for crispy edges.
Use baby or waxy potatoes – They roast beautifully and hold shape.
