Ingredients
For the Roasted Potatoes:

800 g (about 1¾ lb) baby potatoes, halved or quartered

2 tbsp olive oil

1 tsp dried oregano

½ tsp smoked paprika (optional)

Salt and black pepper, to taste
For the Baked Feta & Garlic:

200 g (7 oz) block of feta cheese

4 cloves garlic, unpeeled

1 tbsp olive oil
-
Fresh rosemary or thyme sprigs (optional)
For Garnish & Finishing:

Fresh parsley, chopped
-
Zest of ½ lemon
-
Chili flakes (optional, for a bit of heat)
Instructions
Step 1: Prep and Season the Potatoes

Preheat your oven to 200°C (400°F).

In a bowl, toss halved potatoes with olive oil, oregano, paprika, salt, and pepper.

Spread them in a single layer on one side of a large baking dish or sheet pan.
Step 2: Add Feta and Garlic

Place the feta block on the empty side of the dish.

Add unpeeled garlic cloves next to the feta.

Drizzle 1 tbsp olive oil over the feta and garlic.

Add a few rosemary or thyme sprigs if using.
Step 3: Roast Everything Together

Roast in the oven for 30–35 minutes, or until the potatoes are golden and fork-tender.
