  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups unbleached flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup caramel pieces (divided)
  • 1/2 cup toffee pieces (divided)
  • Sea salt (optional)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Soften the butter in the microwave for about 20 seconds (do not melt).
  3. In a mixing bowl, cream together the softened butter and brown sugar until smooth.
  4. Mix in the egg and vanilla extract until fully combined.
  5. Stir in the flour, baking powder, baking soda, and salt until just combined.
  6. Fold in 1/4 cup each of caramel and toffee pieces; set aside remaining for garnish.
  7. Using a cookie scoop, drop level scoops of dough onto the prepared baking sheet.
  8. Bake for 10-11 minutes or until edges are golden brown.
  9. Use a mason jar lid to gently reshape the cookies right after removing from the oven.
  10. Allow to cool on the baking sheet for five minutes before transferring to a cooling rack.
  11. Melt remaining caramel pieces and drizzle over cooled cookies; top with remaining toffee pieces and optional sea salt.
