- ½ pound boneless salted cod (or firm-fleshed white fish)
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 large egg
- ½ medium onion (finely diced)
- 3 tablespoons minced parsley
- 1 teaspoon minced fresh thyme
- ½ teaspoon minced scotch bonnet pepper (or hot sauce)
- Vegetable oil (for frying)
Instructions
- Soak the salted cod in water overnight, changing the water several times. Drain and shred finely.
- In a mixing bowl, combine flour, baking powder, smoked paprika, granulated garlic, and sugar.
- Add onion, shredded fish, thyme, bell pepper, scotch bonnet pepper, parsley, and egg to the dry mixture. Mix until well combined.
- Gradually add milk until you achieve your desired batter consistency.
- Heat vegetable oil in a skillet to approximately 350°F (180°C).
- Drop spoonfuls of batter into hot oil and fry for about 3–4 minutes or until golden brown.
- Remove fritters using a slotted spoon and drain on paper towels.
