  • ½ pound boneless salted cod (or firm-fleshed white fish)
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 large egg
  • ½ medium onion (finely diced)
  • 3 tablespoons minced parsley
  • 1 teaspoon minced fresh thyme
  • ½ teaspoon minced scotch bonnet pepper (or hot sauce)
  • Vegetable oil (for frying)

Instructions

  1. Soak the salted cod in water overnight, changing the water several times. Drain and shred finely.
  2. In a mixing bowl, combine flour, baking powder, smoked paprika, granulated garlic, and sugar.
  3. Add onion, shredded fish, thyme, bell pepper, scotch bonnet pepper, parsley, and egg to the dry mixture. Mix until well combined.
  4. Gradually add milk until you achieve your desired batter consistency.
  5. Heat vegetable oil in a skillet to approximately 350°F (180°C).
  6. Drop spoonfuls of batter into hot oil and fry for about 3–4 minutes or until golden brown.
  7. Remove fritters using a slotted spoon and drain on paper towels.
