Ingredients

Base Ingredients:
6 large eggs
1 cup cottage cheese (small curd works best)
½ cup shredded cheddar cheese (or any cheese you prefer)
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
¼ tsp onion powder

Optional Add-Ins:
½ cup chopped fresh spinach or kale
¼ cup chopped green onions or chives
¼ cup diced bell peppers or tomatoes
¼ cup cooked crumbled chicken or turkey sausage
1 tbsp chopped fresh herbs (parsley, dill, or basil)


Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 12-cup muffin tin or line with silicone or paper liners.

Step 2: Mix the Base

  1. In a large mixing bowl, whisk the eggs until fully beaten.

  2. Stir in the cottage cheese, shredded cheddar, salt, pepper, garlic powder, and onion powder.

  3. Add any optional mix-ins and gently fold to combine.

Step 3: Fill the Muffin Tin

  1. Divide the mixture evenly among the 12 muffin cups. Fill about ¾ full.

  2. Use a spoon to redistribute the solid ingredients if they sink to the bottom of the bowl.

Step 4: Bake the Muffins

  1. Bake for 20–25 minutes, or until the muffins are set and lightly golden on top.

  2. Insert a toothpick in the center—if it comes out clean, they’re ready.

Step 5: Cool & Serve

  1. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack.

  2. Serve warm or let cool completely before storing.

Notes

Use Small Curd Cottage Cheese – It blends more smoothly into the mixture.
