  • 1 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 325°F and grease two 8-inch round cake pans.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  3. In another bowl, mix vegetable oil, brown sugar, granulated sugar, eggs, and vanilla until well blended.
  4. Combine the wet mixture with dry ingredients until just mixed.
  5. Stir in grated carrots, crushed pineapple, and walnuts until evenly distributed.
  6. Pour batter into prepared pans and bake for about 45 minutes or until a toothpick comes out clean.
