- 500 grams calamari (1.10 lb)
- 400 grams shrimp (14 oz)
- 2 medium-sized eggplants
- 1/4 onion (chopped)
- Extra virgin olive oil (EVOO)
- 1 kg Italian Basil Sugo (48 oz)
- 450 grams Provolone cheese (16 oz, cut into cubes)
- Fresh parsley (finely chopped)
Instructions
- Prepare the seafood by cutting calamari in half and chopping shrimp into pieces.
- Slice eggplants thinly, layer them in a colander with salt to draw out moisture.
- Cook onion in EVOO until golden, add calamari, then shrimp and basil sugo; simmer for 20 minutes.
