  • 1 small onion (sliced)
  • 5 cloves garlic (minced)
  • 3 tablespoons tomato paste
  • 150 mls white grape juice (or fish broth)
  • 2 cups tomato sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons parsley (finely chopped)
  • 12 ounces mixed seafood medley
  • 1/2 pound mussels

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente, then reserve some pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté sliced onion until translucent, then add garlic and cook until fragrant.
  3. Stir in tomato paste, then pour in white grape juice (or fish broth), bringing to a simmer. Add tomato sauce, salt, and pepper; mix well.
  4. Add mixed seafood and mussels; cook until mussels open up, about 3–5 minutes.
  5. Toss drained spaghetti into the skillet with sauce and seafood, adding reserved pasta water as needed for consistency. Garnish with parsley before serving warm.
