  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 34 cloves garlic, minced
  • 1 cup dry apple juice, divided
  • 3 tablespoons flour
  • 2 cups seafood stock
  • 1 bay leaf
  • 1 teaspoon Creole seasoning
  • 1 tablespoon bouillon powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon white pepper
  • 1 tablespoon fresh lemon juice
  • 1 pound crab meat
  • 1 cup heavy cream
  • Kosher salt to taste

Instructions

  1. In a large heavy-bottomed saucepan over medium heat, melt butter and add olive oil. Sauté onion, garlic, and celery for about 3–4 minutes until the onion becomes translucent.
  2. Deglaze the pan with half the dry apple juice (½ cup) and cook for about 2 minutes until reduced.
  3. Sprinkle flour over the vegetable mixture and whisk until you create a thick paste; sauté for an additional minute.
  4. Gradually whisk in seafood stock until smooth; add bay leaf, Creole seasoning, bouillon powder, cayenne, and white pepper. Mix well.
  5. Bring to a boil then reduce heat to medium-low; simmer for about 10–12 minutes until slightly thickened.
  6. Stir in lemon juice, heavy cream, and half of the crabmeat; continue simmering for another 5–8 minutes until heated through.
  7. Remove from heat and discard bay leaf; serve topped with remaining crabmeat and enjoy!
