Ingredients

Scale
  • 2 cans (11 oz each) white shoepeg corn, drained

  • 1 can (15 oz) French-style green beans, drained

  • 1 can (10.5 oz) cream of celery soup

  • ½ cup sour cream

  • ½ cup finely chopped onion

  • 1 cup shredded cheddar cheese (optional for extra richness)

  • 1 sleeve buttery crackers (like Ritz), crushed

  • 4 tbsp unsalted butter, melted

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • ¼ tsp salt (adjust to taste)

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C).

  2. Lightly grease a 9×13 inch baking dish with butter or non-stick spray.

Step 2: Mix the Filling

  1. In a large bowl, combine the shoepeg corn, green beans, cream of celery soup, sour cream, chopped onion, garlic powder, black pepper, and salt.

  2. Stir in the shredded cheese if using.

  3. Mix until everything is well coated and evenly combined.

Step 3: Assemble the Casserole

  1. Pour the corn mixture into the prepared baking dish and spread it out evenly.

Step 4: Make the Topping

  1. In a small bowl, mix the crushed crackers with the melted butter until coated.

  2. Sprinkle the buttery cracker crumbs evenly over the top of the casserole.

Step 5: Bake the Casserole

  1. Bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly around the edges.

Step 6: Cool Slightly and Serve

  1. Let the casserole cool for 5-10 minutes before serving.

  2. Garnish with a little chopped parsley if you like for a pop of color!

Notes

Drain Well – Make sure the corn and green beans are drained well to avoid a watery casserole.
Use Freshly Grated Cheese – It melts better and gives a creamier texture if you’re adding cheese.
Customize It – Add diced pimentos, sautéed mushrooms, or cooked bacon for extra flavor.
Crunchy Topping – Add a few extra cracker crumbs for an even crunchier top!
Make Ahead – Assemble the casserole a day in advance and bake it fresh when needed.
