  • 2 pounds raw shrimp, peeled and deveined
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 2 fresh celery ribs, chopped
  • 4 cups chicken broth
  • 2 cups corn (fresh, frozen, or canned)
  • 2 cups heavy cream
  • 4 ounces cream cheese, cubed
  • 1 cup cheddar cheese
  • 1 cup pepper Jack cheese

Instructions

  1. Season the shrimp with parsley flakes, onion powder, garlic powder, paprika, salt, black pepper, and cayenne.
  2. In a Dutch oven over medium-high heat, sauté onions, bell pepper, and celery in oil or butter until softened.
  3. Add minced garlic and cook for another minute.
  4. Lower the heat and stir in flour; cook for about 2 minutes.
  5. Gradually add chicken broth while stirring continuously.
  6. Simmer for approximately 10 minutes until thickened slightly.
  7. Stir in heavy cream, corn, cream cheese, cheddar cheese, and pepper Jack until well combined.
  8. Gently add shrimp and cover partially; cook for 12 to 15 minutes until shrimp reaches an internal temperature of 145°F.
