  • For the Shrimp and Spinach Filling:

    • 1 lb (450g) large shrimp, peeled and deveined – Tender and sweet.
    • 2 tablespoons olive oil – For sautéing the shrimp.
    • 2 cloves garlic, minced – Adds savory depth to the filling.
    • 4 cups fresh spinach – Adds a nutritious pop of green.
    • 1 tablespoon lemon juice – For a bright, zesty flavor.
    • Salt and pepper to taste – For seasoning the shrimp and spinach.
  • For the Melt:

    • 4 slices sourdough bread – Toasty and sturdy for the melt.
    • 1 cup shredded mozzarella cheese – Gooey, melty cheese.
    • ½ cup grated Parmesan cheese – Adds a salty, nutty flavor.
    • 2 tablespoons butter – For toasting the bread.
    • 1 tablespoon mayonnaise (optional) – For a creamier texture.
    • 1 teaspoon Dijon mustard (optional) – Adds a tangy kick.

Instructions

Step 1: Cook the Shrimp and Spinach
Heat olive oil in a large skillet over medium heat.
Add the shrimp and cook for 2-3 minutes per side, until they turn pink and opaque.
Remove the shrimp from the skillet and set aside.
In the same skillet, add the minced garlic and cook for 30 seconds until fragrant.
Add the fresh spinach and cook for 1-2 minutes, until wilted.
Return the shrimp to the skillet and stir in lemon juice. Season with salt and pepper to taste. Set aside.

Step 2: Prepare the Bread
Spread butter on one side of each slice of sourdough bread.
If using, spread a thin layer of mayonnaise on the other side for extra creaminess.
Place the bread, butter-side-down, on a clean frying pan or griddle over medium heat.

Step 3: Assemble the Melt
On one slice of bread, layer the shrimp and spinach mixture.
Top with a generous handful of shredded mozzarella cheese and grated Parmesan.
Place the second slice of bread on top, butter-side-up.

Step 4: Toast the Sandwich
Toast the sandwich for 3-4 minutes on each side, pressing down gently with a spatula to help the cheese melt and the bread crisp up.
Once both sides are golden brown and the cheese is melted, remove from the heat.

Step 5: Serve & Enjoy!
Cut the sandwich in half and serve warm, with a side of chips, a salad, or just enjoy it on its own!

Notes

Don’t Overcook the Shrimp – Shrimp cook quickly! Be sure not to overcook them, as they can become rubbery.
Use Fresh Spinach – Fresh spinach wilts beautifully and adds a mild flavor. Avoid frozen spinach, as it can become soggy.
Add Heat – For an extra kick, sprinkle red pepper flakes or a dash of hot sauce into the shrimp and spinach mixture.
