- 2 teaspoons gumbo file
- 1 tablespoon chicken bouillon
- 1 tablespoon Creole seasoning
- ½ tablespoon smoked paprika
- 2 green onions (chopped)
- 2 tablespoons fresh parsley (chopped)
Instructions
- Heat canola oil in a large pot over medium heat. Add onion, celery, and bell pepper; sauté until tender, about 5 minutes. Stir in minced garlic until fragrant.
- In the same pot, melt unsalted butter and whisk in flour to create a roux. Cook slowly, stirring continuously until it turns a deep brown color (15–20 minutes).
- Add Creole seasoning, thyme, bay leaves, sausage, salt, and pepper to the roux; stir to combine.
