  • 2 bay leaves

  • ¼ cup all-purpose flour
  • 1 medium green bell pepper (diced)
  • 56 cups shrimp or chicken stock
  • 2 teaspoons gumbo file
  • 1 tablespoon chicken bouillon
  • 1 tablespoon Creole seasoning
  • ½ tablespoon smoked paprika
  • 2 green onions (chopped)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Heat canola oil in a large pot over medium heat. Add onion, celery, and bell pepper; sauté until tender, about 5 minutes. Stir in minced garlic until fragrant.
  2. In the same pot, melt unsalted butter and whisk in flour to create a roux. Cook slowly, stirring continuously until it turns a deep brown color (15–20 minutes).
  3. Add Creole seasoning, thyme, bay leaves, sausage, salt, and pepper to the roux; stir to combine.
  4. Gradually pour in stock while stirring. Bring to a simmer; cook for about 30 minutes.
  5. Stir in shrimp, gumbo file, and chicken bouillon; simmer for another 10–15 minutes until shrimp are cooked through.
  6. Remove bay leaves before serving. Ladle over rice or serve with crusty bread garnished with green onions and parsley.
