  • 8-ounce package macaroni
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 1 small onion, minced
  • 23 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 12-ounce can evaporated milk
  • 1 cup whole milk
  • ¾ cup broth
  • ½ cup grated mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup grated sharp cheddar cheese (divided)
  • Salt and pepper to taste
  • Creole seasoning

Instructions

  1. Cook macaroni according to package instructions until al dente. Drain and set aside.
  2. Season shrimp with salt, pepper, and Creole seasoning in a bowl.
  3. In a deep cast iron skillet over medium heat, melt butter. Add seasoned shrimp; cook until they start to change color but are not fully cooked.
  4. Remove shrimp from the skillet. Sauté minced garlic and onion in the same skillet until translucent.
  5. Whisk in flour, cooking for one minute.
  6. Gradually add evaporated milk, whole milk, and broth while whisking continuously until thickened (3-5 minutes).
  7. Stir in more Creole seasoning if desired, then add mozzarella, Parmesan, and half of the sharp cheddar cheese until melted.
  8. Combine cooked macaroni with the cheese sauce; transfer to a greased baking dish. Top with remaining cheddar cheese and arranged shrimp.
  9. Bake in preheated oven at 375°F for about 10-15 minutes until golden brown and bubbly.
