For the Pasta Bake:

  • 12 oz pasta (penne, rigatoni, or fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp butter
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 1/2 cup breadcrumbs (for a crispy topping)

Instructions

Step 1: Cook the Pasta

  1. Boil the pasta according to package instructions until al dente. Drain and set aside.

Step 2: Cook the Shrimp

  1. In a large skillet, heat butter and olive oil over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes per side until pink and cooked through.
  4. Squeeze in the lemon juice, stir, then remove shrimp from the pan and set aside.

Step 3: Make the Sauce

  1. In the same skillet, add chicken broth, heavy cream, and cherry tomatoes. Simmer for 3-4 minutes until slightly thickened.
  2. Stir in Parmesan cheese and let it melt into the sauce.

Step 4: Assemble the Pasta Bake

  1. Preheat oven to 375°F (190°C).
  2. Toss the cooked pasta in the creamy sauce.
  3. Transfer to a greased baking dish and mix in the shrimp.
  4. Sprinkle mozzarella cheese and breadcrumbs evenly over the top.

Step 5: Bake

  1. Bake for 15-20 minutes until the top is golden and bubbly.
  2. Garnish with fresh parsley, serve warm, and enjoy!
