For the Pasta Bake:
- 12 oz pasta (penne, rigatoni, or fettuccine)
- 1 lb shrimp, peeled and deveined
- 3 tbsp butter
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 1/2 cup breadcrumbs (for a crispy topping)
Instructions
Step 1: Cook the Pasta
- Boil the pasta according to package instructions until al dente. Drain and set aside.
Step 2: Cook the Shrimp
- In a large skillet, heat butter and olive oil over medium heat.
- Add garlic and sauté for 1 minute until fragrant.
- Add the shrimp, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes per side until pink and cooked through.
- Squeeze in the lemon juice, stir, then remove shrimp from the pan and set aside.
Step 3: Make the Sauce
- In the same skillet, add chicken broth, heavy cream, and cherry tomatoes. Simmer for 3-4 minutes until slightly thickened.
- Stir in Parmesan cheese and let it melt into the sauce.
Step 4: Assemble the Pasta Bake
- Preheat oven to 375°F (190°C).
- Toss the cooked pasta in the creamy sauce.
- Transfer to a greased baking dish and mix in the shrimp.
- Sprinkle mozzarella cheese and breadcrumbs evenly over the top.
Step 5: Bake
- Bake for 15-20 minutes until the top is golden and bubbly.
- Garnish with fresh parsley, serve warm, and enjoy!
