Ingredients
- 2 large avocados
- 12 cooked shrimp
- 3–4 tbsp sweet chili sauce
- 2 tbsp fresh cilantro, finely diced
- 1 fresh mango, finely diced
- 1 red onion, finely diced
- 1 red chili, deseeded and finely diced
- Juice of 1 lime
- Extra virgin olive oil
- Salt and black pepper to taste
Instructions
- In a mixing bowl, combine cooked shrimp and sweet chili sauce. Allow to marinate while you prepare the salsa.
- Scoop out most of the avocado from the halves (leave a thin layer). Finely dice the flesh and mix it in a bowl with mango, red onion, red chili, cilantro, lime juice, olive oil, salt, and pepper.
- Season the avocado skins with salt and pepper.
- Fill each avocado half with the salsa mixture and top with marinated shrimp.
