  • 1 pound large shrimp (peeled and deveined)
  • ½ cup plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • ½ teaspoon sriracha sauce
  • 8 small corn or flour tortillas
  • ½ small red or green cabbage (shredded)
  • 1 avocado (sliced)
  • Olive oil
  • Fresh cilantro and Cotija cheese for garnish

Instructions

  1. In a mixing bowl, combine Greek yogurt, lime juice, sriracha sauce, garlic powder, smoked paprika, and a pinch of salt. Mix until smooth.
  2. In a skillet over medium-high heat, add olive oil. Season shrimp with smoked paprika, garlic powder, oregano, onion powder, salt, and black pepper.
  3. Cook shrimp in the hot skillet for about 2 minutes on each side until pink and opaque.
  4. Warm tortillas in a dry skillet or microwave until pliable. Assemble by placing shredded cabbage on each tortilla followed by cooked shrimp and avocado slices.
  5. Drizzle with prepared sauce and top with cilantro and Cotija cheese.
