  • 2 cans light coconut milk
  • 1/4 cup peanut butter
  • 3 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 2 tablespoons coconut sugar or brown sugar
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced garlic
  • 1/4 teaspoon crushed red pepper flakes
  • 2 pounds boneless skinless chicken breast, cut into pieces
  • 1 small butternut squash, cubed
  • 2 large red bell peppers, sliced
  • 1 medium yellow onion, sliced
  • 2 cups frozen peas, thawed
  • Juice of 1 lime

Instructions

  1. In a slow cooker, whisk together coconut milk, peanut butter, red curry paste, fish sauce, coconut sugar, minced ginger, minced garlic, and crushed red pepper flakes until smooth.
  2. Add chicken pieces along with butternut squash cubes, sliced bell peppers, and sliced onion. Stir gently to coat.
  3. Cover and cook on high for 2 to 3 hours or low for 5 to 6 hours.
  4. About 30 minutes before serving, stir in thawed peas.
  5. Finish by stirring in lime juice before serving over prepared brown rice and garnish with chopped cilantro.
