Ingredients
- 2 cans light coconut milk
- 1/4 cup peanut butter
- 3 tablespoons red curry paste
- 2 tablespoons fish sauce
- 2 tablespoons coconut sugar or brown sugar
- 2 tablespoons minced fresh ginger
- 1 tablespoon minced garlic
- 1/4 teaspoon crushed red pepper flakes
- 2 pounds boneless skinless chicken breast, cut into pieces
- 1 small butternut squash, cubed
- 2 large red bell peppers, sliced
- 1 medium yellow onion, sliced
- 2 cups frozen peas, thawed
- Juice of 1 lime
Instructions
- In a slow cooker, whisk together coconut milk, peanut butter, red curry paste, fish sauce, coconut sugar, minced ginger, minced garlic, and crushed red pepper flakes until smooth.
- Add chicken pieces along with butternut squash cubes, sliced bell peppers, and sliced onion. Stir gently to coat.
- Cover and cook on high for 2 to 3 hours or low for 5 to 6 hours.
- About 30 minutes before serving, stir in thawed peas.
- Finish by stirring in lime juice before serving over prepared brown rice and garnish with chopped cilantro.
