  • 1.52 pounds boneless skinless chicken breasts
  • 3 cups low sodium chicken broth
  • 2 jars (14.5 ounces each) creamy Alfredo sauce
  • 2 cups dry rigatoni pasta
  • 1 cup sun-dried tomatoes (drained)
  • 3 cups fresh spinach (packed)
  • 1 tablespoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Rinse and pat dry the chicken breasts; cut into large pieces if desired.
  2. Season the chicken with salt and pepper in a bowl.
  3. Place seasoned chicken in the slow cooker; add 1 cup of chicken broth, minced garlic, oregano, thyme, Italian seasoning, red pepper flakes, and one jar of Alfredo sauce.
  4. Cover and cook on low heat for about 5 hours.
  5. Stir in the remaining jar of Alfredo sauce and dry rigatoni pasta; mix well.
  6. Add drained sun-dried tomatoes and fresh spinach; stir to combine.
  7. Cover again and cook on low for an additional hour or until pasta is tender.
  8. If desired, thicken with cornstarch mixed with water before serving.
