Ingredients
- 1.5–2 pounds boneless skinless chicken breasts
- 3 cups low sodium chicken broth
- 2 jars (14.5 ounces each) creamy Alfredo sauce
- 2 cups dry rigatoni pasta
- 1 cup sun-dried tomatoes (drained)
- 3 cups fresh spinach (packed)
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- Rinse and pat dry the chicken breasts; cut into large pieces if desired.
- Season the chicken with salt and pepper in a bowl.
- Place seasoned chicken in the slow cooker; add 1 cup of chicken broth, minced garlic, oregano, thyme, Italian seasoning, red pepper flakes, and one jar of Alfredo sauce.
- Cover and cook on low heat for about 5 hours.
- Stir in the remaining jar of Alfredo sauce and dry rigatoni pasta; mix well.
- Add drained sun-dried tomatoes and fresh spinach; stir to combine.
- Cover again and cook on low for an additional hour or until pasta is tender.
- If desired, thicken with cornstarch mixed with water before serving.
