- 1 lb ribeye or sirloin steak (cut into bite-sized cubes)
- 1 tbsp olive oil
- 1 lb Velveeta cheese (cubed)
- 6 oz sharp cheddar cheese
- 8 oz pepper jack cheese
- 1 can Rotel tomatoes with green chilies
- 1/2 cup heavy cream
- 1/2 cup diced white onion
- 4 oz pickled jalapeños
- Spices: Spice Rub, cumin, chili powder
Instructions
- Preheat your cast iron skillet over medium-high heat.
- Toss steak cubes in olive oil and Spice Rub until evenly coated. Cook in the skillet for about 5-7 minutes until browned. Remove and set aside.
- Lower the heat and add Velveeta, sharp cheddar, pepper jack, and heavy cream to the skillet. Stir until melted.
- Mix in Rotel tomatoes, onion, pickled jalapeños, cumin, chili powder, and remaining spice rub. Stir well.
- Allow to simmer on low heat for 10-15 minutes until heated through and bubbly.
