Ingredients

  • 1 lb ribeye or sirloin steak (cut into bite-sized cubes)
  • 1 tbsp olive oil
  • 1 lb Velveeta cheese (cubed)
  • 6 oz sharp cheddar cheese
  • 8 oz pepper jack cheese
  • 1 can Rotel tomatoes with green chilies
  • 1/2 cup heavy cream
  • 1/2 cup diced white onion
  • 4 oz pickled jalapeños
  • Spices: Spice Rub, cumin, chili powder

Instructions

  1. Preheat your cast iron skillet over medium-high heat.
  2. Toss steak cubes in olive oil and Spice Rub until evenly coated. Cook in the skillet for about 5-7 minutes until browned. Remove and set aside.
  3. Lower the heat and add Velveeta, sharp cheddar, pepper jack, and heavy cream to the skillet. Stir until melted.
  4. Mix in Rotel tomatoes, onion, pickled jalapeños, cumin, chili powder, and remaining spice rub. Stir well.
  5. Allow to simmer on low heat for 10-15 minutes until heated through and bubbly.
  6. Serve warm with tortilla chips or fresh vegetables.
