  • Ghee (or butter)
  • Onion
  • Celery
  • Carrot
  • Corn kernels (fresh or frozen)
  • Garlic
  • Arrowroot starch (or cornstarch)
  • Sea salt
  • Ground black pepper
  • Paprika
  • Dried thyme
  • Tomato paste
  • Chicken broth (or vegetable broth)
  • Coconut milk
  • Shrimp (peeled and deveined)

Instructions

  1. Heat ghee in a large Dutch oven over medium heat until melted.
  2. Sauté minced onion, chopped celery, carrot, and 1/2 cup corn for 2-3 minutes until tender. Add minced garlic and arrowroot starch; stir for 1 minute.
  3. Mix in sea salt, black pepper, paprika, thyme, and tomato paste; combine well.
