- 3 pounds turkey wings, split into flats and drums
- 2 tablespoons olive oil
- 1 tablespoon Creole seasoning (plus extra for gravy)
- 1 tablespoon poultry seasoning
- 1 teaspoon smoked paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- Salt and black pepper to taste
- ½ large yellow onion, sliced
- 1 medium green bell pepper, sliced
- 4 ounces unsalted butter
- 1 teaspoon minced garlic
- 1 teaspoon fresh thyme, chopped
- 2 tablespoons flour
- 2 cups chicken broth
- ½ cup heavy cream
Instructions
- Wash and dry the turkey wings, then place them in a large mixing bowl.
- Combine Creole seasoning, poultry seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl. Rub the mixture onto the wings until coated.
- Heat olive oil in a skillet or Dutch oven over medium heat. Sear the wings for about 4–5 minutes per side until golden brown. Remove from heat.
- In the same skillet, sauté sliced onion and green bell pepper until softened, about 5 minutes. Add minced garlic and thyme; cook for another minute.
- Sprinkle flour over vegetables and stir well. Gradually whisk in chicken broth and bring to simmer.
- Return seared wings to the skillet with the gravy mixture. Cover tightly and simmer on low for about one hour.
- Stir in heavy cream and reserved seasoning; simmer uncovered for an additional 30 minutes.
