  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, diced
  • ¼ cup cilantro, minced
  • 1 avocado, diced
  • 6 flour tortillas
  • ¾ cup mayonnaise
  • ¾ cup sour cream (or plain Greek yogurt)
  • 2 tablespoons lime juice
  • 1 packet taco seasoning
  • 1 teaspoon onion powder
  • ½ teaspoon parsley

Instructions

  1. In a mixing bowl, mix mayonnaise, sour cream (or Greek yogurt), lime juice, taco seasoning, onion powder, and parsley until smooth.
  2. In a large bowl, combine chopped chicken, black beans, corn, red bell pepper, cherry tomatoes, red onion, cilantro, and avocado. Toss gently.
  3. Pour the dressing over the salad mixture and toss until evenly coated.
