  • 3 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup hot sauce
  • Spices: garlic powder, onion powder, smoked paprika, cayenne pepper, white pepper, black pepper, chili powder, celery salt, oregano, basil, thyme
  • 3 cups all-purpose flour
  • Whole chicken (cut into pieces)
  • Cooking oil for frying

Instructions

  1. In a large resealable bag, combine buttermilk, sliced onions, sliced garlic, hot sauce, salt, and black peppercorns. Add chicken pieces and marinate in the fridge for 6–12 hours.
  2. Mix spices in a small bowl.
  3. Remove chicken from marinade; season with half of the spice blend.
  4. In a separate bowl, mix flour with baking powder and remaining spices.
  5. Coat seasoned chicken in flour mixture using a resealable bag.
  6. Dip each piece in egg mixture before coating again in flour mixture.
  7. Heat oil in a deep pot to 350°F; fry chicken until golden brown and cooked through (about 13–20 minutes).
  8. Drain on paper towels before serving.
