Ingredients
For the Filling:
1 cup cooked spinach, chopped and squeezed dry (fresh or frozen)
¾ cup crumbled feta cheese
¼ cup grated Parmesan cheese
1 egg, beaten (for filling)
1 tsp dried oregano
½ tsp garlic powder
¼ tsp black pepper
For the Pastry:
1 sheet puff pastry, thawed (from a 14–16 oz package)
1 egg, beaten (for egg wash)
1 tbsp sesame seeds or poppy seeds (optional for topping)
Instructions
Step 1: Prepare the Filling
In a bowl, combine cooked, chopped spinach with crumbled feta, Parmesan cheese, 1 beaten egg, oregano, garlic powder, and pepper.
Mix until evenly blended. Set aside.
Step 2: Roll Out the Puff Pastry
On a lightly floured surface, gently roll out the puff pastry sheet to smooth the folds and slightly stretch it.
Cut the sheet in half to create two equal rectangles.
Step 3: Fill and Seal
Spread the spinach and feta mixture evenly over one of the pastry rectangles.
Place the second rectangle on top, pressing lightly to seal.
Use a rolling pin gently to flatten slightly and adhere the layers together.
Step 4: Cut and Twist
Using a sharp knife or pizza cutter, slice the filled pastry into 1-inch strips.
Twist each strip gently and place on a parchment-lined baking sheet, spacing them apart.
Step 5: Add Egg Wash and Toppings
Brush each twist with the remaining beaten egg.
Sprinkle with sesame seeds or poppy seeds if desired for extra texture and visual appeal.
Step 6: Bake
Preheat oven to 400°F (200°C).
Bake for 15–18 minutes, or until puffed and golden brown.
Step 7: Cool and Serve
Let cool for a few minutes on a wire rack.
Serve warm or at room temperature.
Notes
Thaw Properly – Let puff pastry thaw in the fridge for best texture.
Squeeze Spinach Well – Remove as much moisture as possible to avoid soggy pastry.
Work Quickly – Puff pastry is easiest to handle when cold.
Even Twists – Try to twist evenly for uniform baking and appearance.
Use a Ruler – For straight, even cuts if you’re aiming for a polished presentation.
