Ingredients
You’ll need just a few simple ingredients:
- 2 large eggs
- ¼ cup fresh spinach, chopped
- ¼ cup shredded cheese (cheddar, mozzarella, or feta)
- 1 tablespoon milk (for fluffier eggs)
- ½ tablespoon butter or olive oil
- Salt & pepper, to taste
- ¼ teaspoon garlic powder (optional)
- ¼ teaspoon red pepper flakes (optional, for a little heat)
Instructions
Step 1: Prepare the Eggs
- In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder (if using) until smooth and slightly frothy.
Step 2: Sauté the Spinach
- Heat a non-stick pan over medium heat and add butter or olive oil.
- Add the chopped spinach and sauté for about 30 seconds until slightly wilted.
Step 3: Cook the Omelette
- Pour the egg mixture over the spinach, tilting the pan so it spreads evenly.
- Let it cook for 1-2 minutes until the edges start to set.
Step 4: Add the Cheese & Fold
- Sprinkle the shredded cheese evenly over one half of the omelette.
- Once the eggs are mostly set (but still slightly soft on top), carefully fold the omelette in half using a spatula.
- Cook for another 30 seconds to melt the cheese, then remove from heat.
Step 5: Serve & Enjoy
- Slide the omelette onto a plate and sprinkle with red pepper flakes (if using).
- Serve hot with toast, avocado, or a side salad!
