Description

There’s nothing better than a warm, fluffy omelette packed with fresh spinach and gooey cheese to start your day! This easy-to-make dish is full of protein, nutrients, and flavor—perfect for breakfast, brunch, or even a quick meal any time of the day.

You’ll need just a few simple ingredients:

 

  • 2 large eggs
  • ¼ cup fresh spinach, chopped
  • ¼ cup shredded cheese (cheddar, mozzarella, or feta)
  • 1 tablespoon milk (for fluffier eggs)
  • ½ tablespoon butter or olive oil
  • Salt & pepper, to taste
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon red pepper flakes (optional, for a little heat)

Instructions

Step 1: Prepare the Eggs

  1. In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder (if using) until smooth and slightly frothy.

Step 2: Sauté the Spinach

  1. Heat a non-stick pan over medium heat and add butter or olive oil.
  2. Add the chopped spinach and sauté for about 30 seconds until slightly wilted.

Step 3: Cook the Omelette

  1. Pour the egg mixture over the spinach, tilting the pan so it spreads evenly.
  2. Let it cook for 1-2 minutes until the edges start to set.

Step 4: Add the Cheese & Fold

  1. Sprinkle the shredded cheese evenly over one half of the omelette.
  2. Once the eggs are mostly set (but still slightly soft on top), carefully fold the omelette in half using a spatula.
  3. Cook for another 30 seconds to melt the cheese, then remove from heat.

Step 5: Serve & Enjoy

  1. Slide the omelette onto a plate and sprinkle with red pepper flakes (if using).
  2. Serve hot with toast, avocado, or a side salad!

Notes

Whisk Well – Beating the eggs until frothy helps create a fluffy texture.
Don’t Overcook – Remove from heat when the eggs are just set to keep them soft and tender.
Experiment with Cheese – Try Swiss, Monterey Jack, or goat cheese for a twist.
Make It Heartier – Add mushrooms, onions, or bell peppers for extra flavor and nutrition.
