  • 12 lasagna noodles
  • 10 oz frozen chopped spinach
  • 1 egg
  • 15 oz ricotta cheese
  • 8 oz shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 25 oz marinara sauce

Instructions

  1. Cook lasagna noodles according to package directions until al dente. Drain and lay flat on parchment paper.
  2. Thaw spinach and remove excess moisture by squeezing it in a clean kitchen towel.
  3. Preheat oven to 350°F. In a bowl, mix the egg with spinach, ricotta cheese, most of the mozzarella, Parmesan, salt, and pepper.
  4. Spread marinara sauce in a baking dish. Fill each noodle with the cheese mixture, roll up tightly, and place seam-side down in the dish.
  5. Cover with remaining marinara sauce and sprinkle with remaining mozzarella. Bake covered for 30 minutes; uncover and bake for an additional 5-10 minutes until golden.
