- 1.5 pounds beef stew meat
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 2 pounds russet potatoes (peeled & diced)
- 1 tablespoon all-purpose flour
- 3 cups chicken stock
- 1 cup cheddar cheese (freshly grated)
- 3/4 cup heavy cream
Instructions
- Prepare your ingredients by dicing the onions, mincing the garlic, and peeling & dicing the potatoes.
- In a large pot or Dutch oven over medium-high heat, add oil and sear the beef stew meat until browned on all sides. Remove from pot.
- Add diced onions to the pot; sauté until softened followed by minced garlic for an additional minute.
- Stir in flour, then gradually pour in chicken stock while stirring to avoid lumps.
- Add back the seared beef and diced potatoes; bring to a simmer, cover, and reduce heat to low.
- Simmer for about an hour until beef is tender; stir occasionally.
- Remove from heat and mix in heavy cream and shredded cheddar cheese until well combined.
