  • 1.5 pounds beef stew meat
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 pounds russet potatoes (peeled & diced)
  • 1 tablespoon all-purpose flour
  • 3 cups chicken stock
  • 1 cup cheddar cheese (freshly grated)
  • 3/4 cup heavy cream

Instructions

  1. Prepare your ingredients by dicing the onions, mincing the garlic, and peeling & dicing the potatoes.
  2. In a large pot or Dutch oven over medium-high heat, add oil and sear the beef stew meat until browned on all sides. Remove from pot.
  3. Add diced onions to the pot; sauté until softened followed by minced garlic for an additional minute.
  4. Stir in flour, then gradually pour in chicken stock while stirring to avoid lumps.
  5. Add back the seared beef and diced potatoes; bring to a simmer, cover, and reduce heat to low.
  6. Simmer for about an hour until beef is tender; stir occasionally.
  7. Remove from heat and mix in heavy cream and shredded cheddar cheese until well combined.
