  • SPG seasoning (salt, pepper, garlic powder)
  • Avocado oil
  • 46 golden potatoes (peeled and cubed)
  • 4 tablespoons unsalted butter (divided)
  • 1 cup warm whole milk
  • 2 cups beef broth
  • 1/3 cup Worcestershire sauce
  • 12 tablespoons garlic paste
  • 1 tablespoon lemon zest
  • Juice of 1/2 lemon
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tablespoons Dijon mustard
  • 1 stick unsalted butter
  • 3 tablespoons all-purpose flour
  • Prepared au jus
  • Caramelized onions (see instructions)
  • Chopped chives (for garnish)

Instructions

  1. Season beef cubes with SPG seasoning and avocado oil. Refrigerate while preparing other components.
  2. Boil peeled potatoes in salted water until fork-tender, then mash with butter and warm milk.
  3. Caramelize sliced onions in butter until golden brown.
  4. Simmer beef broth with Worcestershire sauce, garlic paste, lemon zest, lemon juice, rosemary, thyme, Dijon mustard, and butter to create the au jus. Strain and set aside.
  5. Make gravy by whisking flour into melted butter, then adding the au jus until thickened.
  6. Sear the seasoned beef bites in a hot skillet until browned.
  7. Plate mashed potatoes topped with beef bites and drizzle with gravy; garnish with onions and chives.
