- 2 ½ tablespoons olive oil
- 2 pounds skirt steak (thinly sliced)
- 1 packet taco seasoning
- 3 tablespoons water
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 small sweet onion (sliced)
- 1 tablespoon minced garlic
- 1 cup shredded Colby Jack cheese
- 6 large flour tortillas
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté sliced bell peppers and onion until translucent. Add garlic and sauté until fragrant. Set aside.
- In the same skillet, heat remaining olive oil and cook the thinly sliced beef until desired doneness. Stir in taco seasoning and water, mixing well before adding sautéed veggies.
- Place a tortilla in a clean skillet over medium heat. On one half, layer beef mixture, veggies, and cheese. Fold the tortilla over and toast for about 30 seconds on each side until golden brown.
- Repeat with remaining tortillas and filling.
