  • ¼ cup all-purpose flour
  • 4 tablespoons unsalted butter (or coconut oil)
  • 1 cup unsweetened applesauce (or mashed ripe banana or plain Greek yogurt)
  • ½ cup pure maple syrup or honey
  • ¼ cup milk of choice
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white whole wheat flour

Instructions

  1. Preheat your oven to 375 degrees F and prepare a muffin tin with cooking spray or parchment liners.
  2. In a bowl, toss chopped strawberries with ¼ cup all-purpose flour to prevent sinking.
  3. Melt butter in a large bowl and whisk in applesauce (or banana/yogurt), maple syrup (or honey), milk, vanilla extract, and eggs until well combined.
  4. Stir in baking powder, baking soda, and salt; mix well.
  5. Gently fold in white whole wheat flour and remaining all-purpose flour until just combined. Carefully add the strawberries.
  6. Scoop batter into muffin tin wells and bake for 16-18 minutes or until a toothpick comes out clean.
  7. Cool muffins in the pan for five minutes before transferring to a wire rack.
