  • 2 medium delicata squash
  • Olive oil
  • Salt and pepper
  • ¾ cup uncooked quinoa (rinsed)
  • ½ cup chopped red onion
  • 1 clove garlic (minced)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 8-ounce can tomato sauce
  • ¼ cup water
  • 15-ounce can black beans (rinsed and drained)
  • ¼ cup fresh cilantro
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the delicata squash in half lengthwise, scoop out seeds, brush cut sides with olive oil, season with salt and pepper, and place cut side down on a baking sheet.
  3. Roast the squash for about 25–30 minutes until tender.
  4. Rinse quinoa under cold water, then cook in a saucepan with 1½ cups water over medium heat until fluffy (about 15 minutes).
  5. In a mixing bowl, combine cooked quinoa, red onion, garlic, chili powder, cumin, tomato sauce, black beans, and cilantro.
  6. Once roasted, turn squash halves over and fill generously with the quinoa mixture. Top with cheese.
  7. Bake for an additional 15–20 minutes until heated through and cheese is melted.
