Ingredients
- 2 medium delicata squash
- Olive oil
- Salt and pepper
- ¾ cup uncooked quinoa (rinsed)
- ½ cup chopped red onion
- 1 clove garlic (minced)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 8-ounce can tomato sauce
- ¼ cup water
- 15-ounce can black beans (rinsed and drained)
- ¼ cup fresh cilantro
- 1 cup grated cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the delicata squash in half lengthwise, scoop out seeds, brush cut sides with olive oil, season with salt and pepper, and place cut side down on a baking sheet.
- Roast the squash for about 25–30 minutes until tender.
- Rinse quinoa under cold water, then cook in a saucepan with 1½ cups water over medium heat until fluffy (about 15 minutes).
- In a mixing bowl, combine cooked quinoa, red onion, garlic, chili powder, cumin, tomato sauce, black beans, and cilantro.
- Once roasted, turn squash halves over and fill generously with the quinoa mixture. Top with cheese.
- Bake for an additional 15–20 minutes until heated through and cheese is melted.
