  • 4 medium zucchini
  • 1 pound ground beef
  • 1 red bell pepper, chopped
  • ½ cup chopped white onion
  • 1 teaspoon minced garlic
  • 2 cups marinara sauce
  • ¼ cup chopped basil
  • ½ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F and spray a baking dish with cooking spray.
  2. Halve the zucchinis lengthwise and scoop out seeds to create wells. Sprinkle with salt and set aside.
  3. In a skillet over medium-high heat, cook ground beef until browned; drain excess fat.
  4. Add bell pepper, onion, and garlic to the skillet; cook until softened.
  5. Stir in marinara sauce and basil; simmer for a few minutes.
  6. Pat zucchini dry, brush with olive oil, then fill with the beef mixture.
  7. Bake for 15 minutes; add cheese on top and bake for another 10 minutes until bubbly.
