- 32 oz cream cheese (room temperature)
- 2/3 cup regenerative organic certified® cane sugar from Wholesome
- 3/4 cup sour cream (room temperature or greek yogurt)
- 1/2 cup heavy cream (room temperature)
- 1 tsp pure vanilla extract
- 4 large eggs (room temperature)
- 2/3 cup cookie dough balls
- 1 cup white chocolate chips
- 1/3 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). In one bowl, mix flour, baking soda, and salt. In another bowl, beat butter and cane sugar until fluffy. Add egg, yolk, and vanilla. Gradually mix in dry ingredients and fold in sprinkles.
- Press crust mixture into a greased springform pan and bake for about 15 minutes or until lightly golden. Allow cooling.
- For the filling, beat cream cheese and cane sugar until smooth. Add sour cream, heavy cream, and vanilla; mix well. Incorporate eggs one at a time before gently folding in cookie dough balls.
- Pour filling over cooled crust and smooth the top. Bake for approximately 80 minutes until set but jiggles slightly in the center.
- Cool in the oven for an hour before refrigerating for at least four hours.
- For ganache, heat heavy cream and pour it over white chocolate chips in a bowl; stir until smooth.
- Drizzle ganache over chilled cheesecake; decorate with sprinkles before serving.
