Ingredients

- 2 tablespoons sugar

- ½ cup powdered sugar

- 1 cup heavy whipping cream
For the Topping
- 1 large peach, thinly sliced

- 2 tablespoons honey or apricot jam (for glazing)
Instructions
Step 1: Prepare the Crust
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture into the bottom of a springform pan, making sure it’s evenly packed.
- Chill in the refrigerator for 15 minutes while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Spread the filling evenly over the chilled crust and smooth the top.
- Refrigerate for at least 4 hours, or overnight for best results.
Step 3: Add the Summer Fruit Topping
- Arrange peach slices and summer berries on top of the cheesecake in a decorative pattern.
- Warm the honey or apricot jam slightly and brush over the fruit to give it a glossy finish.
