For the Cake:

  • 1½ cups all-purpose flour

  • 1½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream or plain Greek yogurt

  • ¼ cup milk

For the Berries:

  • 1 cup fresh strawberries, sliced

  • ¾ cup fresh blueberries

  • ¾ cup fresh raspberries

  • 1 tbsp all-purpose flour (to toss with berries)

For the Topping:

  • 2 tbsp coarse sugar or regular sugar (for sprinkling)

  • Powdered sugar (optional, for dusting)

  • Fresh mint leaves (optional, for garnish)


Instructions

Step 1: Preheat and Prepare
Preheat your oven to 350°F (175°C).
Grease a 9-inch round cake pan and line the bottom with parchment paper.

Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
Set aside.

Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.

Step 4: Combine Wet and Dry
Add the sour cream and milk to the butter mixture and mix until smooth.
Gradually add the dry ingredients, mixing just until combined. Do not overmix.

Step 5: Fold in the Berries
Toss the berries with 1 tbsp of flour (this helps prevent them from sinking).
Gently fold ⅔ of the berries into the batter.

Step 6: Bake the Cake
Pour the batter into the prepared cake pan and spread it evenly.
Scatter the remaining berries on top and sprinkle with coarse sugar.
Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

 

Step 7: Cool and Serve
Allow the cake to cool in the pan for 10 minutes.
Run a knife around the edge, then invert onto a wire rack to cool completely.
Dust with powdered sugar and garnish with fresh mint before serving if desired.
