- 200 grams fish fillets (cod, haddock, tilapia)
- ½ tsp salt
- ½ tsp white or black pepper
- 1 egg white
- 4 tbsp plain flour
- 5 tbsp cornstarch
- ½ tsp baking powder
- ½ tsp garlic powder
- 3–4 tbsp cold water
- 3 tbsp tomato ketchup
- 1½ tbsp rice vinegar
- 2 tbsp sugar (brown or white)
- ¼ tsp cornstarch (for sauce)
- ½ onion (diced)
- 1 bell pepper (sliced)
- Pineapple chunks (8–10 pieces)
- 2 cloves garlic (minced)
Instructions
- Pat the fish fillets dry and cut them into cubes. Season with salt and pepper.
- In a bowl, mix flour, cornstarch, garlic powder, baking powder, and egg white. Gradually add cold water until smooth.
- Coat the fish cubes in the batter. Heat oil in a wok over medium-high heat and fry the fish until golden brown (about 3–4 minutes). Drain on paper towels.
- In another bowl, combine rice vinegar, ketchup, sugar, salt, water, and cornstarch for the sauce.
- Heat oil in the wok again and stir-fry garlic, onion, and bell pepper until tender.
- Add the sauce to the vegetables; cook until thickened. Toss in fried fish until well-coated.
