  • 1 egg white
  • 4 tbsp plain flour
  • 5 tbsp cornstarch
  • ½ tsp baking powder
  • ½ tsp garlic powder
  • 34 tbsp cold water
  • 3 tbsp tomato ketchup
  • 1½ tbsp rice vinegar
  • 2 tbsp sugar (brown or white)
  • ¼ tsp cornstarch (for sauce)
  • ½ onion (diced)
  • 1 bell pepper (sliced)
  • Pineapple chunks (8–10 pieces)
  • 2 cloves garlic (minced)

Instructions

  1. Pat the fish fillets dry and cut them into cubes. Season with salt and pepper.
  2. In a bowl, mix flour, cornstarch, garlic powder, baking powder, and egg white. Gradually add cold water until smooth.
  3. Coat the fish cubes in the batter. Heat oil in a wok over medium-high heat and fry the fish until golden brown (about 3–4 minutes). Drain on paper towels.
  4. In another bowl, combine rice vinegar, ketchup, sugar, salt, water, and cornstarch for the sauce.
  5. Heat oil in the wok again and stir-fry garlic, onion, and bell pepper until tender.
  6. Add the sauce to the vegetables; cook until thickened. Toss in fried fish until well-coated.
