  • 2 pounds shrimp (peeled and deveined)
  • 1 cup cornstarch
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 eggs (beaten)
  • Canola oil (for frying)
  • 1 cup pineapple chunks
  • 1 red bell pepper (cut into chunks)
  • 1 green bell pepper (cut into chunks)
  • 1 yellow onion (cut into chunks)
  • 3 cloves garlic (minced)
  • 2/3 cup pineapple juice
  • 1/4 cup orange juice
  • 2 tablespoons soy sauce
  • 1/4 cup light brown sugar (packed)
  • 1/4 cup white sugar
  • 1/4 cup rice vinegar
  • 1/4 cup apple cider vinegar
  • 1/3 cup ketchup
  • 1/4 teaspoon garlic powder
  • 1/4 cup cornstarch
  • 1/4 cup water
  • Sesame seeds for garnish

Instructions

  1. In a large mixing bowl, combine cornstarch, flour, salt, and black pepper.
  2. In another bowl, beat the eggs until fluffy. Dip each shrimp in egg mixture then coat with the cornstarch mixture.
  3. Heat canola oil in a frying pan over medium-high heat. Test temperature with a small piece of batter.
  4. Fry shrimp in batches for 2-3 minutes on each side until golden brown; drain on paper towels.
  5. In another pan over medium heat, sauté garlic, bell peppers, and onion until tender.
  6. Mix pineapple juice, orange juice, soy sauce, sugars, vinegars, ketchup in a separate bowl; pour over sautéed vegetables.
  7. Stir until sauce thickens; add fried shrimp and pineapple chunks. Toss gently to coat.
  8. Serve hot over rice or noodles garnished with sesame seeds.
