- 2/3 cup pineapple juice
- 1/4 cup orange juice
- 2 tablespoons soy sauce
- 1/4 cup light brown sugar (packed)
- 1/4 cup white sugar
- 1/4 cup rice vinegar
- 1/4 cup apple cider vinegar
- 1/3 cup ketchup
- 1/4 teaspoon garlic powder
- 1/4 cup cornstarch
- 1/4 cup water
- Sesame seeds for garnish
Instructions
- In a large mixing bowl, combine cornstarch, flour, salt, and black pepper.
- In another bowl, beat the eggs until fluffy. Dip each shrimp in egg mixture then coat with the cornstarch mixture.
- Heat canola oil in a frying pan over medium-high heat. Test temperature with a small piece of batter.
- Fry shrimp in batches for 2-3 minutes on each side until golden brown; drain on paper towels.
- In another pan over medium heat, sauté garlic, bell peppers, and onion until tender.
- Mix pineapple juice, orange juice, soy sauce, sugars, vinegars, ketchup in a separate bowl; pour over sautéed vegetables.
- Stir until sauce thickens; add fried shrimp and pineapple chunks. Toss gently to coat.
- Serve hot over rice or noodles garnished with sesame seeds.
