Ingredients

1 cup mashed cooked sweet potato (from baked or steamed sweet potatoes)

½ cup brown sugar or coconut sugar

¼ cup maple syrup or honey

Instructions
Step 1: Preheat & Prep

Preheat oven to 350°F (175°C).

Line a muffin tin with paper liners or grease with cooking spray.
Step 2: Mix Wet Ingredients

In a large mixing bowl, whisk together mashed sweet potato, eggs, brown sugar, maple syrup, oil, and vanilla until smooth.
Step 3: Add Dry Ingredients

Add flour, baking soda, baking powder, cinnamon, nutmeg, and salt to the bowl.

Stir gently until just combined—don’t overmix.

Fold in optional nuts, raisins, or chocolate chips if using.
Step 4: Fill Muffin Tins

Step 5: Bake & Cool
