Ingredients

For the Pancakes:
1 cup mashed sweet potatoes (about 1 medium sweet potato)
1 ¼ cups all-purpose flour
1 tbsp brown sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
¼ tsp ground nutmeg
1 cup buttermilk (or use milk + 1 tsp lemon juice)
2 large eggs
1 tsp vanilla extract
2 tbsp melted butter (plus extra for cooking)

Optional Toppings:
Maple syrup
Chopped pecans or walnuts
Fresh berries
Powdered sugar
Whipped cream
A pat of butter


Instructions

Step 1: Cook the Sweet Potato
Pierce a medium sweet potato with a fork and microwave for 6-8 minutes until tender.
Let it cool slightly, peel, and mash with a fork until smooth.
You’ll need 1 cup of mashed sweet potato for the recipe.

Step 2: Prepare the Batter
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, whisk together the mashed sweet potato, buttermilk, eggs, vanilla extract, and melted butter.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix—lumps are okay!

Step 3: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
Pour ¼ cup of batter for each pancake onto the skillet.
Cook for 2-3 minutes until bubbles form on the surface and the edges look set.
Flip and cook another 1-2 minutes until golden brown and cooked through.
Repeat with the remaining batter, greasing the pan as needed.

Step 4: Serve & Garnish
Stack the pancakes on a plate and top with your favorite garnishes.
Drizzle with maple syrup, sprinkle with chopped nuts, and add a dollop of whipped cream or berries.
Serve warm and enjoy!

Use Fresh Sweet Potatoes – Roasting or steaming enhances their sweetness and flavor.
Don’t Overmix – This keeps the pancakes light and fluffy.
