  • 1/4 cup all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 1/2 lbs chuck roast or chuck steak, cubed
  • 2 tablespoons olive oil
  • 2 onions, diced
  • 2 carrots, chopped
  • 1 (28 oz) can Italian diced tomatoes
  • 2 cups beef or vegetable broth
  • 1 1/2 tablespoons Worcestershire sauce

Instructions

  1. Preheat your oven to 350˚F (175˚C).
  2. In a mixing bowl, combine flour, smoked paprika, garlic powder, salt, and pepper. Toss the beef cubes in the mixture until well coated.
  3. Heat olive oil in a large stockpot over medium-high heat and brown the coated beef on all sides. Remove from the pot.
  4. Sauté diced onions and chopped carrots in the same pot until softened.
  5. Return the browned beef to the pot and add undrained diced tomatoes, broth, and Worcestershire sauce.
  6. Cover the pot with a lid and bake for about 2 ½ to 3 hours until meat is tender.
  7. For a thicker sauce, mix cornstarch with water and stir into the sauce before serving.
