- 1/4 cup all-purpose flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 1/2 lbs chuck roast or chuck steak, cubed
- 2 tablespoons olive oil
- 2 onions, diced
- 2 carrots, chopped
- 1 (28 oz) can Italian diced tomatoes
- 2 cups beef or vegetable broth
- 1 1/2 tablespoons Worcestershire sauce
Instructions
- Preheat your oven to 350˚F (175˚C).
- In a mixing bowl, combine flour, smoked paprika, garlic powder, salt, and pepper. Toss the beef cubes in the mixture until well coated.
- Heat olive oil in a large stockpot over medium-high heat and brown the coated beef on all sides. Remove from the pot.
- Sauté diced onions and chopped carrots in the same pot until softened.
- Return the browned beef to the pot and add undrained diced tomatoes, broth, and Worcestershire sauce.
- Cover the pot with a lid and bake for about 2 ½ to 3 hours until meat is tender.
- For a thicker sauce, mix cornstarch with water and stir into the sauce before serving.
