  • 1/4 cup Water
  • 1 Tablespoon Taco Seasoning
  • 1 1/2 cups Uncooked White Rice
  • 2 cups Chicken Broth
  • 1 cup Chunky Salsa
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Cumin
  • 1/2 cup Sour Cream
  • 2 teaspoons Chipotle Sauce from can of Adobo Peppers
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 8 Flour Tortillas (burrito size)
  • 1 cup Nacho Cheese sauce
  • 2 cups shredded Mexican Cheese Blend
  • 1 Tablespoon Olive Oil

Instructions

  1. In a skillet over medium heat, heat olive oil and sauté chopped onions until translucent. Add ground beef and cook until browned.
  2. Drain excess fat and stir in water and taco seasoning. Simmer for about 5 minutes until thickened.
  3. In another pot, cook rice with chicken broth according to package instructions until fluffy.
  4. In a bowl, mix salsa, sour cream, chipotle sauce, garlic salt, cumin, chili powder, sugar, salt, paprika, garlic powder, and onion powder until smooth.
  5. Assemble each tortilla by adding beef mixture, rice, nacho cheese sauce, and shredded cheese; roll tightly into burritos.
  6. In the skillet, cook each wrapped quesadilla seam-side down over medium heat until golden brown on both sides.
