  • 1 pound lean ground beef
  • ½ yellow onion (diced)
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12 ounces frozen corn
  • 14.5 ounces petite diced tomatoes with green chilies (not drained)
  • 1 cup sour cream
  • 3 cups Mexican blend cheese
  • 2 cups finely crushed Doritos
  • Optional: black beans
  • Optional: green onions
  • Optional: diced tomatoes
  • Optional: shredded lettuce
  • Optional: avocado

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 9×13 inch casserole dish with nonstick spray.
  3. In a large skillet over medium heat, cook the ground beef and diced onions until browned; drain excess grease.
  4. Stir in minced garlic and sauté for one minute.
  5. Add frozen corn, taco seasoning, undrained diced tomatoes, and finely crushed Doritos; mix well.
  6. Remove from heat and stir in sour cream and two cups of cheese until combined.
  7. Pour mixture into the prepared dish; bake for about five minutes until warmed through.
  8. Top with remaining cheese and loosely crushed Doritos; return to oven for another five minutes until cheese is melted.
  9. Let cool slightly before serving with optional garnishes.
