Ingredients
- 2 pounds lean ground beef
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup canned corn
- 1 cup crushed nacho cheese chips
- 1 can Rotel (diced tomatoes with green chilies)
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1 tablespoon taco seasoning mix
- 1/2 cup enchilada sauce
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.
- In a large bowl, combine ground beef, onion, garlic, corn, crushed chips, drained Rotel, half of the cheddar cheese, eggs, and taco seasoning. Mix until well blended.
- Transfer the mixture into the loaf pan and shape it into a loaf.
- Pour enchilada sauce over the top and spread evenly.
- Bake for 50-60 minutes until the internal temperature reaches 160°F (71°C).
- Remove from oven, top with remaining sauce and cheese, then bake for an additional 3-5 minutes until cheese melts.
