  • 2 pounds lean ground beef
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup canned corn
  • 1 cup crushed nacho cheese chips
  • 1 can Rotel (diced tomatoes with green chilies)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1 tablespoon taco seasoning mix
  • 1/2 cup enchilada sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.
  2. In a large bowl, combine ground beef, onion, garlic, corn, crushed chips, drained Rotel, half of the cheddar cheese, eggs, and taco seasoning. Mix until well blended.
  3. Transfer the mixture into the loaf pan and shape it into a loaf.
  4. Pour enchilada sauce over the top and spread evenly.
  5. Bake for 50-60 minutes until the internal temperature reaches 160°F (71°C).
  6. Remove from oven, top with remaining sauce and cheese, then bake for an additional 3-5 minutes until cheese melts.
  7. Let rest before slicing and serve with your favorite toppings.
