- 1 pound lean ground beef
- 1 packet taco seasoning
- Shredded lettuce

Instructions
- Preheat your oven to 400°F. Wash the Russet potatoes thoroughly, pat dry, and poke several holes in each with a fork. Wrap each potato in aluminum foil.
- Place the wrapped potatoes on a baking sheet and bake for approximately 1 hour until tender when pierced with a fork. Let cool slightly.
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess grease, then add taco seasoning and the specified amount of water from the packet. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Remove foil from potatoes and cut open each one carefully. Fill with the seasoned beef mixture and top with shredded lettuce, cheddar cheese, sour cream, salsa, guacamole, and green onion.
