  • 4 to 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • Shredded lettuce
  • Cheddar cheese
  • Sour cream
  • Salsa
  • Guacamole
  • Green onion

Instructions

  1. Preheat your oven to 400°F. Wash the Russet potatoes thoroughly, pat dry, and poke several holes in each with a fork. Wrap each potato in aluminum foil.
  2. Place the wrapped potatoes on a baking sheet and bake for approximately 1 hour until tender when pierced with a fork. Let cool slightly.
  3. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess grease, then add taco seasoning and the specified amount of water from the packet. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  4. Remove foil from potatoes and cut open each one carefully. Fill with the seasoned beef mixture and top with shredded lettuce, cheddar cheese, sour cream, salsa, guacamole, and green onion.
